Pepper Pot is a typical Christmas Food eaten on Christmas Day in Barbados.

Delicious simply does not describe this fabulous dish made using a wonderful array of spices and an ingredient that defies a generic name; I don’t think it can be called a spice, or flavouring and has an aroma between figs and beef stock and is an extract called Casareep from the Cassava Plant .
